Jewish Apple Cake.
sent December 6 at 12:13 PMI remember my mom making this cake ONLY around Christmas. She would have issues since I would eat the apples she bought immediately after we got home from the store, haha. I LOVE THIS CAKE. Since I had my son (he will be 30 in Jan 2021) I developed an ALLERGY to APPLES. Yes, it’s a real thing. And its AWFUL I love apples sooooo much But, guess what? I can eat COOKED APPLES!! Here is her recipe for Jewish Apple Cake. I think it is Kosher since no dairy is in the recipe. 4 large eggs 1 C Vegetable oil 2 C Sugar 2 C SIFTED flour 4 TEAS Cinnamon ½ TEAS Salt 4 TEAS Baking POWDER 2 Teas Vanilla 3-4 Gala Apples (Just don’t use red delicious or a TART apple) 1 C chopped walnuts Grease liberally a Bundt pan Sift all dry ingredients together and set aside Peel and shred apples on a box grater (cover and set aside) Chop your walnuts, set aside Beat the eggs with a whisk or hand mixer add sugar and beat some more add the oil slowly while beating Add your dry ingredients to the wet (incorporate so no dry appears) Fold in the apples and walnuts Bake :350/1hr This cake is so moist, but here is an optional icing recipe: 1 stick butter 1 c chopped walnuts 1 TEAS vanilla 8oz cream cheese Confectioners sugar Blend all together I don’t measure the sugar and just get it to a consistency I like Let cake cook and drizzle over
name Jewish apple cake likely came about because this cake is dairy free, and thus can still be consumed with meals containing meat (in accordance with kashrut).

Chocolate Fudge
Ingredients:
2 cups (250 grams) chopped walnuts (Optional- Can be substituted for another nut or marshmallows)
6 cups (1050 grams) semisweet chocolate chips
Two 14-ounce (794 grams) cans sweetened condensed milk
1/2 cup (1 stick or 113 grams) unsalted butter
Pinch of kosher salt
1 teaspoon (5 grams) pure vanilla extract
Cooking spray
Directions: Gather your ingredients (Makes the job a lot easier). Preheat the oven to 350°F. Spray a 9 × 13-inch baking dish (glass Pyrex dish) with cooking spray and line it with wax paper.Place the walnuts on a parchment lined sheet pan and toast for 10 minutes, or until they are fragrant and just start turning brown. In a large pot over medium heat, melt the chocolate chips, sweetened condensed milk, butter, and salt. Heat it to just short of a boil, until it’s loose and melted.
Make sure its smooth and velvety for richer fudge. Remove the pot from the heat and using a wooden spoon, stir in the vanilla and the toasted walnuts (Or Substitution).Pour the hot mixture into the prepared baking dish and put in in the fridge until it is cool and set .On a cutting board, lift the wax paper from the dish and flip onto board. Using a sharp knife, cut into 2-inch squares or desired shape.
If you are not planning to eat it right away, put in the fridge for harder fudge. If you prefer softer fudge, it’s okay to leave out for 1 hour. Enjoy!

1/2 cup + 2 tablespoons salted butter melted 1 cup granulated sugar 2 large eggs 2 teaspoons vanilla extract 1/2 cup melted milk chocolate chips 3/4 cup all-purpose flour 1/4 cup unsweetened cocoa powder 1/2 teaspoon salt 1 cup milk chocolate chips
Preheat oven to 350 degrees F. Line a metal 9x9 pan with parchment paper. Pour melted butter into a large mixing bowl. Whisk in sugar by hand until smooth, 30 seconds. Add in eggs and vanilla extract. Whisk 1 minute.
Whisk in melted chocolate until combined and smooth. Use a rubber spatula to stir in flour, cocoa powder, and salt until just combined. Stir in whole chocolate chips.
Pour into prepared pan and smooth out. Bake in the preheated oven for 30 minutes. Let cool in pan 30 minutes before slicing.

Ingredients:
1/2 cup butter, softened.
1/2 cup shortening.
1 1/2 cups white sugar.
2 eggs.
2 teaspoons vanilla extract.
2 3/4 cups all-pupose flour.
2 teaspoons cream of tartar.
1 teaspoon baking soda.
1/4 teaspoon salt.
2 tablespoons white sugar.
2 teaspoons ground cinnamon
Directions:
Preheat oven to 400 degress F (200 degrees C). Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.
Mix the 2 tablespoons sugar and the cinnamon. Rolls balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.
Prep: 20 minutes. Cook: 10 minutes. Ready in: 1 hour.

Put the grapes on first , then a sliced bannana, slice the top off the straberries then add that to the top of the sliced bannana , then top it off w/ a minni marshemello. to make them look like little grinch or santa heads.

I made shortbread cookies for first time and giving as gifts, they turned out great!
heres recipe I used
Notes: they taste good with or without the spice! I also added a tsp of vanilla essence. I found they made 18 star shaped cookies (not 40 like the recipe said lol - maybe smaller star shapes were used?)

Potato Doughnuts

INGREDIENTS
1 tbsp. kosher salt
1 tbsp. baking powder
1 tsp. ground nutmeg
2 large oranges
1/4 c. whole milk
1/4 c. (1/2 stick) unsalted butter, cut into small pieces
2/3 c. mashed potato's or 2/3 c. instant mashed potato flakes
3 large eggs
1 1/3 c. sugar
1 tsp. pure vanilla extract
oil, for frying
Flour, for the surface
SUGAR COATING
1 c. sugar
Zest of 1 orange (about 1 tbsp.)
DIRECTIONS
In a large bowl, whisk together the flour, baking powder, salt and nutmeg.
Finely zest the oranges (you should get about 2 tablespoons) and set aside, then squeeze the juice (you’ll need 3⁄4 cup).
In a small saucepan, bring the orange juice to a boil, then remove from heat. Add the milk and butter and stir until the butter melts. Add the potato flakes and stir until combined and thickened. Transfer the mixture to the large bowl of an electric mixer.
On low speed, beat in the eggs one at a time. Add the sugar, orange zest and vanilla and mix to combine. Gradually add the flour mixture, mixing until just combined. Cover and refrigerate overnight.
When ready to fry, make the sugar coating: In a medium bowl, combine the sugar and zest.
In a large deep saucepan, heat 3" to 4" oil to 360 degrees F (when frying, maintain a range of 340 degrees F to 360 degrees F).
Meanwhile, place half the dough on a floured surface and turn to coat in the flour. Gently pat the dough at so it’s 1⁄2" thick and use a floured 3" round cutter to cut out doughnuts. Punch out holes using a 1" cutter; reserve the holes. Use the smaller cutter to cut additional holes from the scraps.
In batches of 3 to 4 large doughnuts, fry until deep golden brown, 1 1⁄2 to 2 minutes per side. Transfer to a baking rack. While the doughnuts are still warm, coat them one at a time in the sugar mixture; return to the rack. Repeat with the remaining dough.

INGREDIENTS
1cup unsalted butter, at room temperature
1⁄2 cup powdered sugar
1 1⁄2 teaspoons pure vanilla extract
2 1⁄4 cups flour
1⁄4 teaspoon salt
3⁄4 cup finely chopped walnuts or 3/4 cup pecans
1 cup powdered sugar
DIRECTIONS
Mix the butter, 1/2 cup powdered sugar and vanilla thoroughly. Sift in the flour and the salt, stirring until combined (it will be sticky). Mix in the nuts. Place the dough on some plastic wrap and shape into a ball. Wrap and chill in the refrigerator for about 20 minutes.
Preheat oven to 400 degrees. Roll dough into 1 inch balls and place on a cookie sheet (cookies don’t spread). Bake 10-12 minutes, or until set but not brown. While still warm, roll in the remaining powdered sugar. Set aside to cool, and then roll them one more time in the sugar before serving.
SERVES:18-20 but I usally make adouble batch

MAKES 20 to 21 Cups
INGREDIENTS
12 large egg whites
1 cup granulated sugar
12 egg yolks
1⁄2 teaspoon salt
3 cups whipping cream
1 cup of vanilla bean ice cream
2 tablespoons sugar
1 whole fresh vanilla bean but it dont have you can use 1 tablespoon vanilla
7 cups whole milk
2 cups Bourbon (optiational)
1 dash nutmeg
1 dash Of cinnamon
20 cinnaomon sticks
DIRECTIONS
You will need 3 medium to large bowls.
In the first bowl beat egg whites until they start to thicken.
Add 1 cup sugar, beat until thick.
In the second bowl: Beat egg yolks and salt until thick.
In a third large bowl beat cream until it starts to thicken. Then add the cup of vanilla bean ice cream and mix till well mixed
Add 2 tbsp sugar & vanilla to the beaten cream.( if using vanilla slice through the top easy and scrape out the vanilla beans
Add milk, Bourbon beating continually (for non alcoholic eggnog omit the alcohol and add artificial rum flavoring doing it a tsp at a time until you achieve the desired taste).
Combine all the ingredients, and chill.
Serve with a garnish whip cream on top then sprinkle of nutmeg & cinnamon on top of each glass. the add the fresh cinnamon stick
tip me and my family use the cinnamon stick to stir it occasionaly to keep the spices mixed in Cognac is best but bourbon is a good close 2nd if choose to go the acholic version of this
